Meet Dany and Daniela, seasoned restaurateurs with a passion for bringing authentic Italian flavours to the Sunshine Coast. Together with Chef Alessandro, a mastermind in the kitchen, from the picturesque Puglia region of Italy, they form a winning trio that has redefined the dining scene. Drawing inspiration from their roots, they've introduced the concept of traditional Focaccia to the Sunshine Coast, infusing it with their unique flair and expertise. The Chef
Alessandro Todisco - Master Pizzaiolo, born among flour sacks and raised with the aroma of leavened dough, Alessandro Todisco's future in the art of pizza making was almost predestined.
However, to truly excel, one needs sacrifice, extensive training, and talent. Alessandro comes from a family of skilled pizzaioli. Despite his lineage, he had to work his way up from the basics. His first job was at Al Dolmen, his family's pizzeria, where he started at 15, handling everything but pizza-making itself, which he could only practice after closing hours.
The early days were tough, marked by hard work, long hours, and low pay. Yet, Alessandro's determination and adherence to his father Leonardo's teachings, coupled with his constant learning of new techniques, helped him grow professionally, earning respect from both family and customers.
Alessandro's breakthrough came when he moved to Australia, joining '400 Gradi, a renowned pizzeria, where he mastered the classic Neapolitan style, including the slap technique for opening dough and wood-fired cooking. He later worked at Brunetti, managing a pizzeria and gaining valuable experience. His quest for new challenges led him to Shop 225 in Melbourne, where he delved into gluten-free and vegan pizzas. After 15 years of dedication, Alessandro has become an expert pizzaiolo, favouring high-protein whole grain or semi-whole grain flours, with a 72-hour maturation process. Inspired by his father and mentored by Luigi Ricchezza, Alessandro's journey exemplifies how passion, hard work, and talent can turn dreams into reality.
ROMAN STYLE PIZZA AL TAGLIO (square pizza slices)
Roman-style pizza is known for its distinctive square style slices. The dough undergoes a meticulous maturation process, being proofed for 72 hours to achieve its perfect texture. These pizzas are cooked in trays, then cut into squares and reheated in the oven just before serving to ensure optimal flavor and warmth.
The menu offers a delightful variety, with up to 16 different flavour combinations available each day. From the classic simplicity of Margherita to more sophisticated options like truffle oil and Taleggio cheese, there's something to satisfy every palate.
